Baby portobello & pea risotto

I used this recipe for the risotto but substituted baby portobello mushrooms for shiitake, since I happened to have those in the fridge. I thought my arm would fall off from all that stirring (I always complain about this, but seem to conveniently forget when it’s time to cook!), but the dish earned two thumbs up from James, so I guess it was worth it in the end! I also had some green beans to use up, so I steamed and then sautéed them with garlic, butter, salt & pepper, and some lemon juice. Mm mm good!

Tonight’s dinner: parmesan risotto, asparagus tossed with olive oil & lemon zest, and a little sauvignon blanc. The risotto was creamy, flavorful, and absolutely delicious – turns out all that vigorous stirring really does pay off in the end!



This week kind of flew by quickly, but I think it’s because I had Tuesday off. In any case, I’m so happy tomorrow is Friday! I have to give a little presentation to an auditor at work, which I’m not looking forward to, but hopefully the rest of the day will be smooth sailing, and the weekend will soon be underway.
