We ate pork on 3 out of 4 days this week! Next week will be a pork-free zone to compensate. The chops turned out well, and James was a big ol’ fan of the sauce. I think mushrooms would have made it even better (I tend to say this about most things though)! This time, I must give James proper plating credit – he did such a good job!

Left over

So I had a few slices of the pork tenderloin from last night, and a handful of pasta left from the chicken marsala night. I tossed the noodles in a pan with some butter and garlic, threw in the pork (cubed), diced up a tomato, and added a splash of balsamic vinegar and some salt and pepper. A little sprinkle of parsley later and dinner was ready – seriously took me less than 15 minutes! James loved it and asked if I could make this for his friends when they come over for dinner…who knew leftovers could be such a hit?

Sometimes the hardest part about cooking dinner is figuring out what to make. There have been way too many times when I’ve wandered up and down the aisles at the grocery store, trying to improvise meals for the rest of the week on the fly. These also just happen to be the times when I end up spending way too much on stuff I don’t need. It’s so much easier (especially after a long, annoying day at work) when everything is already laid out for you, which is why I think it’s nice when James asks for a specific dish…OR when one of your friends has the idea of posting a monthly menu for others to try and enjoy!

Orzo salad (adapted from Israeli couscous salad)

Greek yogurt with blackberries and honey



I am so excited about this new project because everything turned out so well. It’s the first time I’ve made any of these things, which means that the recipes must be pretty dummy-proof! It definitely earned James’s stamp of approval – especially the pork tenderloin…and the salad…oh yea, and the dessert. Can you tell he was kind of a big fan? We are so looking forward to many more delicious months to come!

Friday, James and I went to Disneyland! Apparently, we weren’t the only ones with this bright idea – it was SO crowded! We actually thought that it’d be kind of quiet since it was a weekday. WRONG! While we were riding the tram on the way back to our car, we overheard a Disney employee saying that even on the coldest, rainiest, nastiest day, Disneyland gets an average of 30,000 visitors! (What recession?) They’re running a “2fer” promotion, which means that we can go back to California Adventure for free within the next 30 days. I’m hoping we actually do because I’ve never been, and I can’t resist anything free!
